I used to be super intimidated by the thought of cooking a whole chicken but now I’m so glad I know how to because its honestly revolutionary as far as cooking goes in my from scratch kitchen.

Roasting your own chicken at home ensures that you are in control of the ingredients that goes into it. You can feel good when serving your family this healthy alternative to traditional store bought rotisserie chicken and I promise it tastes even better and just about as easy as buying it from the store.

Not only is this recipe easy and mostly hands off but its super impressive to serve your family a beautiful roasted chicken served alongside all your families favorite sides.

Cooking a whole chicken is also a lot more economical for your wallet since instead of buying marked up parts you get the whole chicken that allows everyone to pick their favorite pieces! Mines always the thighs! Plus, when you cook a whole chicken you get way more of that tasty crispy skin everyone loves!

Tips for a Perfect Oven Roasted Chicken

  1. Set the chicken out and allow it to come to room temperature to ensure it cooks evenly (about 30-45 minutes)
  2. Pat your chicken dry before applying oil and seasonings. This step is very important for creating crispy skin
  3. Take softened butter and get it between the meat and the skin to make it extra delicious!
  4. Season liberally! Make sure every part of your chicken is thoroughly coated in all that delicious seasoning.
  5. Stuff the cavity with any aromatics you have on hand or would like to use. Some great examples would be onions, garlic, lemons and any type of herbs would do great! Aromatics certainly help to bring out all the delicious flavors in your chicken.

Recipe Ingredients

Seasonings: salt, garlic powder, onion powder, Italian seasoning, smoked paprika and turmeric for color and health benefits

Aromatics: half of an onion and 1 lemon

Tools: 10-inch Lodge Cast Iron Skillet

Instructions to Cook a Crispy Oven Roasted Chicken

  1. set chicken out of the fridge 30-45 minutes prior to cooking
  2. preheat oven to 350 degrees F
  3. Pat chicken dry
  4. put softened butter between skin and chicken meat
  5. Place in 10 inch cast iron skillet like this one here
  6. cover in neutral tasting oil such as avocado oil or grapeseed oil
  7. season liberally with salt, garlic powder, onion powder, Italian seasoning, smoked paprika and turmeric
  8. bake at 350 for 20 minutes per pound

A whole chicken should reach an internal temperature of 165 degrees at the thickest part such as the breast or thigh. Another way to tell is if the juices are no longer running pink but clear.

Ingredients

  • 1 whole chicken
  • 2 teaspoons neutral tasting oil (ex. avocado oil)
  • 2 tablespoons softened butter
  • 1 tablespoon salt
  • 2 teaspoon garlic powder
  • 2 teaspoons onion powder
  • 2 teaspoons Italian seasoning
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon turmeric

Aromatics (optional)

  • 1 lemon
  • 1/2 onion
  • herbs
  • 1 head of garlic, top sliced off

Instructions
