Pasta Fagioli Recipe | Healthy + Easy Soup with Bone Broth

This one pot Pasta Fagioli is a must try! This soup is incredibly easy to make and super healthy for you! This dish takes inspiration from the Mediterranean Diet! This soup has been a go to lunch on my fertility journey after miscarriage! Aside from this soup being incredibly tasty its SO easy to make a big batch and enjoy it all week!

Bone Broth

This is my favorite part about this soup because I get to use nutrition packed bone broth! However, this is optional. You can always use vegetable or chicken stock in place of the bone broth. However, if you haven’t hoped on the bone broth bandwagon nows your chance! For someone that struggles with gut issues bone broth has been incredible for me. This powerful healing food is full of collagen, rich in many vitamins and minerals, anti-inflammatory and as I mentioned early its a complete powerhouse for your gut!

Ingredients

How To Make Pasta e Fagioli

First: Dice up your onion and add it to your stock pot with butter or olive oil. Sauté until translucent.

Second: Next, add in your minced garlic and stir until fragrant.

Third: add in your diced tomatoes and add the tomato sauce.

Fourth: add in your water, broth, spices and beans.

Fifth: Reduce to a simmer and cover for about 15 minutes.

Sixth: Once your soup as simmered and the flavors have had time to meld. Bring your pot to a boil and add in your pasta and cook as directed on package until al dente (about 8-10 minutes)

Total Time 30 minutes

Ingredients

  • 1 15 oz. can diced tomatoes
  • 1 15 oz. can tomato sauce
  • 1 yellow onion
  • 1 15 oz. can cannelloni beans
  • 1 15 oz. can kidney beans
  • 5 cloves garlic
  • 1/2 cup ditalini pasta
  • 1 cup water
  • 5 cups bone broth
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 3 tsp salt
  • 1 tsp Italian seasoning

Instructions

How to Store + Reheat Your Pasta Fagioli

To Store:

Place in an air tight container and refrigerate for up 3-4 days.

To Reheat:

This soup will thicken as it stands. If you desire to thin in out a little place in a pot and add a little broth or water. Heat and serve!

Pasta e Fagioli Additions

Sausage

You can totally add in sausage for extra protein and bulk just add another cup or two of water. Since I typically make this four lunch I leave out the meat to make it more cost effective. However, if I was making this for dinner I’d definitely be adding in some delicious sausage.

Carrots

Carrots are a pretty standard ingredient in this recipe you can totally add and taste delicious. In addition to being delicious they bulk up the nutritional value.
